Dinner Recipe: Roast Chicken & Sweet Potatoes

   Nicole and I decided that during the week, we will be trying different recipes. We are doing this because dinner can sometimes get boring, and when it gets boring, we tend to eat shitty food thus getting into the habit of eating shitty food.  So we have a method down. Nicole finds 5 recipes a week, and I pick up the ingredients while doing the grocery shopping. I love getting the groceries so its something I do regularly. I find it oddly fun.  
   Tonight we made Roasted Chicken & Sweet Potatoes.

Roast Chicken & Sweet Potatoes

Caramelized sweet potatoes and red onion are the bed for chicken thighs that cook up fast in a very hot oven—perfect for a quick healthy chicken dinner. Serve with a fall salad of mixed greens, sliced apples and blue cheese.

4 servings | Active Time: 15 minutes | Total Time: 45 minutes

Ingredients

2 tablespoons whole-grain or Dijon mustard
2 tablespoons chopped fresh thyme or 2 teaspoons dried
2 tablespoons extra-virgin olive oil, divided
1/2 teaspoon salt, divided
1/2 teaspoon freshly ground pepper, divided
1 1/2-2 pounds bone-in chicken thighs, skin removed
2 medium sweet potatoes, peeled and cut into 1-inch pieces
1 large red onion, cut into 1-inch wedges
Preparation

Position rack in lower third of oven; preheat to 450°F. Place a large rimmed baking sheet in the oven to preheat.
Combine mustard, thyme, 1 tablespoon oil and 1/4 teaspoon each salt and pepper in a small bowl; spread the mixture evenly on chicken.
Toss sweet potatoes and onion in a bowl with the remaining 1 tablespoon oil and 1/4 teaspoon each salt and pepper. Carefully remove the baking sheet from the oven and spread the vegetables on it. Place the chicken on top of the vegetables.
Return the pan to the oven and roast, stirring the vegetables once halfway through, until the vegetables are tender and beginning to brown and an instant-read thermometer inserted into a chicken thigh registers 165°F, 30 to 35 minutes.

        This meal was pretty tasty. Nicole isn’t normally a fan of sweet potatoes but shes trying to like them by having them served in different ways.  She enjoyed the way these turned out.  Cooking it all together really made everything taste great because all of the flavors and seasonings clicked with each other nicely. I’d definitely make this one again. Tomorrow we are making Portobello Mushroom quesadillas.

Statham Shirt!

     The second of the two new shirts put out this week is the new Jason Statham shirt.  I’ve been trying to get the Statham shirt correct for some time now.  I could never get it right and the finished  product never looked like him.  This weekend, with a glass of good beer and some music, I sat down Friday night and finally got it right.  This shirt will go over well with any action fan!  This is available now in our Etsy and eBay stores right now.  It will be available on supersweetshirts.com in a few days.

New Danny Trejo Shirt!

   2013 is going to be different in terms of the direction we are going in with our shirts.  I wanted to take the next step in becoming more unique, doing things with our designs that you don’t see anywhere else.  all of our shirts are screen printed to order which means that when you order a shirt, we are not just grabbing it out of a box and mailing it, each shirt is printed to order and some of the artsier designs are truly unique.  This week I am rolling out two new designs, starting with the Danny Trejo.

Danny Trejo is a straight up, legitimate bad ass and we felt that he deserved to be the subject of our line of action tribute shirts.  This shirt will be the ultimate conversation piece at any social gathering.  This has been listed in our Etsy and eBay stores and will be up on the main website in a few days.

This Is More Like It…

    Living in Buffalo, you get to hear all the stereotypes about our city, one in particular being the weather.  I’ll admit, there is a history to the weather stereotype but it isn’t nearly as bad as they make it out to be.  The past few years have been almost depressing with barely any snow and green holidays.  I couldn’t live in a state that didn’t get snow.
    This year was looking to be the same as last year with a lack of snow and unseasonably warm temperatures.  Until last night.  Finally we got trampled, as last night’s storm rampaged through the area dropping a foot of snow.  It was pretty awesome.  My wife doesn’t share my enthusiasm and thinks I’m crazy when I show genuine excitement at the opportunity to go shovel.  I love it.  As a child, you get to see the snow fall, you bundle up, and you go play outside.  As an adult, unless you have a kid, you can’t just bundle up and go play in the snow (unless you want your neighbors to think that you’re an idiot).  So you have to bundle up and go shovel, but I like it.  I like getting blasted in the face with fresh powder. I like the fact that I have snow and ice collecting in my beard while my nose runs uncontrollably.  Most of all, I love the feeling that you get when you finish shoveling, and you bundle up and sit on the couch with some hot chocolate or tea.

The Christmas season is over, so the blog posts will resume as regular from now on.  I will get back to blogging about shirt ideas, food recipes, beer, gadgets, and action movies.  My wife and I have started making new recipes for dinner at night.  I plan on blogging them with pictures to share our success and our failures.  Happy New Year!

Top Rated Seller!

    Just a few more days and this blog will be back to normal.  This holiday season was crazy, but overall, it was not only the best year we have had, but the most successful.  If your not familiar with eBay’s “Top Seller” program, it was changed last summer and has become a gigantic pain in the ass.  The requirements to be a considered this were pretty difficult to meet, but we rocked the orders out this Holiday season with great success and we were given that title once again on eBay!

A Little Over a Week Left!

A Note to International Buyers

We are getting close to the Holidays and this is often when people frantically scramble to find last minute gifts.  Within reason, we can normally accommodate for situations like this but for international orders, it is not possible.  Please note:

    For all international orders, we can not guarantee delivery by Christmas.  International delivery, at the rates we offer (First Class International Shipping), takes 8-15 business days to arrive.  The reason the range is so large, is that once the package leaves the States, we have no control over the amount of time it takes a package to get through customs.

We do not want any of our valued customers running into a situation where they are left without a gift to give someone for the holiday.  Last year we ran into a few situations like this, and we are fully avoiding it this year.  For all international orders placed, you will get an email confirming you awareness that you understand that the package will not arrive by December 25th.  If a response is not received, a full refund will be granted and the transaction will be cancelled.
